Rabri is made in a special pan with a flat surface. Jalebis are also made in the same type of pan. It is commonly called Tai.

Quick Pakistani Rabri Recipe | KK Cooks And Bakes

Ingredients:

  • Milk 3 kg
  • Cardamom powder ½ tsp
  • Kewra 2 tbsp
  • Sugar 2 cups
  • Almonds, pistachios as required

Method:

Cook one kg of milk in a pan in such a way that the milk bubbles do not form, just cook gently, and remove the layer that comes on top of the milk with a flat spoon in the pan.

When the layer formed on the top of the milk is set aside in the pan, add a little more milk to the pan.

When all the milk is poured into the pan and a thick enough layer is formed on the side, add kewra, cardamom powder, and sugar to the milk and cook the milk.

When the sugar dissolves in the milk, pour the milk on top of the upper layers and mix, the whole mixture will thicken and become rubbery.

Take out this rubbery on a plate and serve after cooling it and garnishing it with almonds and pistachios.

It will be rubbery and soft. If you want to make dry rabri, dry the rabri by further cooking milk and sugar. Put some sugar on top of this rubber and take it out on a plate.

The spoon should be stirred constantly with light hands but not rubbed with a spatula.

Finally, serve chilled.
